How to set up automatic response with e-mail?

I am going on vacation, so how can a response to any emails I receive automatically tell people I'm gone? And how do I reset it when I don't need it anymore after I get back?

I would like to know how do I set up a response where someone has read their email I sent them.

There is no "address" label in the inbox. Another response said to do it from the friends chat. I don't see that either. why is this so difficult? I would think I should be able to set this up from the "create" email area.

There are two specific email addresses that I want to set up a special automated response for. I however do not want to set up a generic response at all. Is that possible to do? because the special and generic boxes are on the same page... please help...
