Why do Americans say Happy Holidays, not Happy Christmas?

I say Merry Christmas because I prefer to keep the Christ in Christmas, not censor it with "Happy Holidays"

It's just a habit to say Merry Christmas, since it was always said on tv, well more so than Happy Holidays, but I'm just wondering if it's offensive or politically incorrect. Preferrably from people who don't celebrate Christmas.
